Gerardo Di Nola Rigatoni is made in small batches with 100% Italian Durum Wheat Semolina. Durum Wheat Semolina is known for it’s wonderful flavor, and has the highest protein value of any wheat. We use a slow drying process which helps the pasta retain it’s full complex flavor and aroma. Gerardo Di Nola uses a Bronze Extrusion process which gives the pasta a rougher surface texture. This allows the sauce to actually attach to the pasta, instead of having sauce floating over slippery pasta.
